I tried something different today.

Red and I are partial to walleye but smoked is our favorite way to eat them.  I just baste them with olive oil and sprinkle lemon pepper and toss them on the grill with the skin left on.

Well I got 1 keeper walleye yesterday and several really nice crappie.  I cleaned most of them today but filleted one and left the skin on.  It went on the smoker with the walleye.  I left the biggest ones on ice till we gave the smoked crappie the old taste test.

They were as good as the smoked walleye.  So I went back and cleaned the rest of them leaving the skin on.  They got rinsed and patted down with paper towels.  Now they are in freezer bags waiting for me to thaw and smoke next week.

I'll be keeping more like this is thawing and smoking is as good as just smoking right off the cleaning table. ;D

That is a method I'll have to try when I get to Nashville where my grill is. Are you filleting around the rib cage thereby leaving the ribs intact to the spine ? Looks great.   :)

I go back and take the ribs off after I fillet them.  I don't have the skill to take them off as I fillet on those bitty fish.  All that is left is the lateral bones and I surgically remove them before we begin to eat.
